Cafe Latte Latino

Hi Friends,
One of the greatest things that I enjoy is to cook and share with friends. When my friends come to visit me, I always try to let them taste some of our dishes and they always ask me for the recipe. Lately, I am cooking only during weekends because of my studies. I am looking for some recipes that are tasty, fast and easy to do. I will also share some of my weekend recipes and others for when you really do not have time to cook. The recipes are not original mine, I have adopted them through years and they are really good! I hope you enjoy them.
Now that Fall is here and the nights are getting cooler, how about tasting a nice hot cup of caffe latte. You will not have to go out of your house to enjoy it. The recipe for today is:

Cafe con Leche (Cafe Latte)

Ingredients
4 tablespoons of coffee (your favorite)
4 cups of water ( 3 cups of water for stronger coffee)
2 cups of milk
sugar or Splenda as you like
Procedure:
Brew your coffee in your coffeepot as usual. Boil the milk in a small pot until it begins to rise. Stir it while boiling. Pour the milk in the cup until it is half full or 3/4 if you like it less strong. Pour coffee until the cup is full. Put the amount of sugar that you like and enjoy your own caffe latte.

Carmen,

I am not one who enjoys cooking, however I have a boyfriend who's a chef. So I am going to share one of his favorite recipes.

Ingredients:
2 chicken breasts (large diced cubes)
1/2 pound peeled, deveined shrimp (can be fresh or frozen)
1 jar Classico sundried tomato alfredo sauce
1 box of medium pasta shells
1 tbs italian seasoning
2 tbs olive oil

Boil water in large sauce pan for noodles. May add salt if like. Saute'chicken, shrimp, olive oil, and italian seasoning in large pan for several minutes until shrimp is pink on outside and opaque in middle, and chicken is cooked throughly. Combine drained noodles in the saute' pan with the shrimp and chicken. Add jar of alfredo sauce and mix well. Enjoy!

Serves 3-4.

1.25 cups of mayonaise
1 cup crab meat
.5 cup of finely grated cheddar cheese
i minced green onion
1 tablespoon horseradish (more to taste)
4 tablespoons low cal French dressing
1 tsp. Worcestershire sauce
1 cup diced shrimp.
Mix ingredients and chill. Once you have made it one time, adjust the proportions of ingredients to taste.

Hey Carmen, several people asked me for this recipe for the salad that I brought to the ATL 3 fellowship. Here it is...

Dorito Salad

1 can dark red kidney beans – rinse and drain
1 can corn niblets – drain
1 small onion – diced small
1 green bell pepper – diced small
6 – 8 Roma tomatoes – diced small
(make sure the tomatoes are firm)
1 bottle of Catalina Dressing
2 cups finely shredded Sharp Cheddar Cheese
Nacho Cheese Doritos – crushed small

Combine the first 6 ingredients. Put in refrigerator.
When ready to eat toss in the cheese and crushed Doritoes. You can crush the Doritoes ahead of time and place in a baggy.

(If you are not going to eat all of the salad at one time, just mix in Doritos and cheese for one or two servings, etc., as needed. That way, it will keep longer.)

Shrimp Soup
Ingredients:
10 cups of water
1 whole onion peeled and cut in half
1/2 green bell pepper cut in strips
2 cloves garlic
1/8 teaspoon of dried oregano
1/8 teaspoon of pepper (optional)
3teaspoons of salt
1 chicken broth cube
1 cup of tomato sauce
1 bag of shrimps deveined and shelled
1 1/2 cups of rice

Procedure:
Previously rinse the rice with water and leave it in a bowl with water covering it(30 minutes)
1. In a 4 quart pot
combine the first nine ingredients.
Let it boil for 10 minutes and taste for salt.
2. Add the drained rice and let it boil for 15 minutes and stir it.
3. Add the shrimps and let them boil for 10 minutes.
Do not cover the pot
during the cooking process.You can substitute the rice for noodles if you prefer.
Enjoy it!

One of my families favorite recipes is for tea cakes. They are similar to sugar cookies but thinner.

2 eggs
2 cups of sugar
2 sticks of butter
4 cups of flour

mix, roll into balls, press flat, and cook at 400 degrees for 12 minutes.

Most members of the family prefer to eat the dough before its cooked.

Hi Carmen,
One of the favorites that is very easy is Orange Toast. The recipe follows:

1 or 2 packages of the the "Very Thin" bread (we like white and wheat). Remove crusts and cut bread slices into thirds.

Preheat oven to low temperature- about 200 degrees

Grate the zest from one large navel orange into a bowl.

Beat with 1 cup sugar

and

2 sticks real butter

Spread the mix generously onto the small bread pieces. Bake in the oven for one hour and remove from pan immediately.

This makes a crunchy orange toast snack that never stays around my house for very long. L.

Hi Carmen,

This is great. I so enjoyed the recipe for teacakes. When I was growing up my grandmother made teacakes. It has been so long since I had them. It was nice to journey down memory lane and take some time over the Thanksgiving break to make and share teacakes with my three granddaughters.

Thanks for that enjoyable time.
